Been making the stuff for several years. Started as a tweak of Alton Browns recipe. Pretty tasty and healthy. Here is the equipment needed, the strategy and the recipe.
I use a 12 cup class coffee pot reservoir which is loaded with a 2 or 3 ounces of fresh chopped ginger, a handful or two fresh or frozen berries (whatever you like), 2 cups sugar, 8 tablespoons lemon or lime juice and a squirt of honey. Stir it up good and let it set at room temp for a day or two, then cover with boiling water to fill the container and hit it with an immersion blender to pulverize the ingredients and let it sit another day or two or at least till it cools down...then strain it into new container through a ladies stocking. Then split the syrup between four cleaned and sterilized !.75 liter plastic liquor bottles with screw on lids and sprinkle a little champagne yeast on top and attach the lids. Keep the bottles upright of they will leak. Takes a day or two to carbonate or as long as you like (the longer left to carbonate the less sweet and more alcohol will be produced) then into the refrigerator to use as desired. Makes a great wine cooler or mixer with hooch.
